salmon veggie red curry
Salmon red curry is the kind of meal I make when I want something that tastes like I spent all afternoon in the kitchen, but actually comes together in about 30 minutes. The trick is layering: marinating the salmon while the curry base builds, browning the aromatics until they're properly golden, and adding the curry paste in two stages so it deepens as it cooks. Coconut milk is KEY and pulls everything together so nicely. It’s packed with tons of fiber from the baby broccolini & snap peas, and truly just tastes like soul food.

Salt & pepper, to taste
Coconut aminos, a drizzle

½ red onion, minced
