This is my go-to when I’m craving something cozy, spicy, and high in protein,but still light. It’s creamy without cream… thanks to a blend of cottage cheese and silken tofu!
Notes:
You can totally make this ahead: the sauce stores well in the fridge for a few days or in the freezer.
If you want it vegetarian - chickpeas or tofu work great in this sauce too
I like to double the sauce and use it throughout the week. it’s soooo good.
