gujarati savory lentil & rice muffins, packed with veggies
If you don’t know what handvo is, it’s a savory Gujarati baked lentil + rice cake that’s usually crispy on the outside, soft inside, and packed with spices, veggies, and protein.
My fiancé is half Gujarati, and I became obsessed with them the first time I had them at his parents house. His mom makes them as muffins, which I honestly love even more because they’re so easy to portion and grab throughout the week!!
Our 1-year-old nephew is also fully obsessed (she just makes his without the spice), which says a lot.
This is her version that I’ve been making on repeat lately. I’m still working on perfecting it, and next step is making the batter completely from scratch by soaking rice + dal… but for now this is such a good, easy shortcut :)
